This week’s Alchemy Raw recipe! Where it all began, with a rich melt in your mouth moussey Raw Chocolate Cheesecake.
Note: For this recipe its best to have a Thermomix or powerful blender.
RAWDICULOUS CHOCOLATE MOUSSE CHEESECAKE
Unlike traditional sweets, most raw desserts are nutrient dense, so a little goes a long way. This is perfect for a guilt-free treat that's good for the body!
This raw cheesecake has a base made from almonds, hazelnuts and chopped dates. It's decadent and super easy to make. All you need is a good food processor or a Thermomix. The filling is made from a combination of hazelnuts, coconut oil and coconut milk and cacao, all of which offer an array of health benefits.
First up, line the base of a springform (cheesecake) tin with baking paper and set aside.
Blend together at high speed to preferred coarseness. Soaking all the ingredients beforehand is an option, to blend faster and make the base smoother! Press into base of springform tin.
In this cake I scattered some offcuts of our raw caramel slice on the base. You can do something similar with nuts, frozen strawberries or a raw coarse 'chocolate soil'
Blend from low speed to high and then on high for 5 minutes to form a smooth moussey mixture.
Pour over base and refrigerate till firm
Pour over cake and then set whole cake in freezer for at least 5 hours! Enjoy
